A hundred years ago Pike County was a hub of farming families. They may have been able to spend money at small merchandise stores once a month or less. On Sept. 12, you can see for yourself how they fed and kept themselves clothed without buying everything.
Local and regional farmers will share the homemade heritage of the region by demonstrating how to make hook rugs with scraps of wool and apple cider with an antique apple press, use a mule to plow a garden and bale hay, milk goats, make peach cobbler in dutch ovens and create pottery.
The Flint River woodcarvers will share their wood-carving secrets, various bands will provide entertainment, a play written by George Ingram especially for Farm Heritage Day will debut on stage and there will be plenty of activities for children such as making dolls from corn husks. [Full story »]
Members of Zebulon city council hosted public meetings last Tuesday and Thursday to discuss the city fire department joining a county fire district. Council must decide whether to join Pike by the end of the month since county tax bills must be ordered by then. Council will vote on the issue at a called meeting Thursday, Aug. 27.
Council asked questions of city fire officials, the county manager and consultants from National Fire Services about ISO ratings, equipment reimbursement and an oversight committee that would include city representation.
The biggest issue was Zebulon’s ISO rating of 6 versus the county’s ISO ratings of 8 and 9. A fire department’s ISO score impacts what property owners are charged for insurance premiums. A poor rating (closer to 10) means higher insurance costs for property owners. [Full story »]
Representatives from Washington, D.C., Georgia, Zebulon, Concord and Molena met Monday, Aug. 17, to discuss current issues facing the county and region. Topics at the Hometown Connection included the county fire district, a Flint River dam, local cable provider, stimulus funding, SPLOST sales tax and the role of the Three Rivers Commission (formerly McIntosh Trail RDC).

2 cups cooked shredded chicken, cold
1 cup chopped celery
1 cup chopped onion
1 Tablespoon lemon juice
Salt and pepper to taste
3/4 cup mayonnaise
2 hard-boiled eggs, chopped (optional)
Mix chicken, celery, onion, lemon juice, salt and pepper. Add mayonnaise, mix well. Fold in chopped eggs, blending throughout. Serve on rolls, in a hollowed out tomato, or on a bed of crisp lettuce leaves.
Vegetable Pasta Salad:
1 (16 ounce) package uncooked tri-color spiral pasta
2 stalks celery, chopped
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/2 cup chopped yellow bell pepper
1 pint grape tomatoes, halved
1/2 cup chopped green onion
1 (16-ounce) bottle Italian-style salad dressing
1/2 cup grated Parmesan
Cook pasta in large pot of boiling water until al dente. Rinse under cold water, and drain.
Mix, celery, peppers, tomatoes, and green onion together in large bowl. Add the cooled pasta and mix together. Pour the dressing over mixture, add the Parmesan and mix well.
The Department of Transportation will pave Kings Road in Pike County using federal stimulus money.
Funding for the project will come directly from the American Infrastructure Recovery Program passed in Washington, D.C., to help stimulate the economy and lessen the impact of the recession.

Pork-the other white meat. I use boneless pork chops for this recipe.
6 pork chops
1 onion, thinly sliced
3/4 cup Kikkoman Teriyaki Baste and Glaze
1 tbsp. chili powder
1 tbsp. lemon juice
1/4 cup water
Pre-heat oven to 350. Arrange pork chops, side by side in casserole dish, sprinkle with onion slices. Combine in bowl; baste and glaze, chili powder, lemon juice and 1/4 cup water; pour over chops and onion slices. Cover and bake for about 1 hour and 15 minutes or until chops are tender.
