Cucumber Salad
Ingredients:
1 cucumber, peeled and diced
1 cup (1/4 whole) honeydew, finely diced
Kosher salt
2 cups Greek yogurt
1/4 red onion, thinly sliced
1 jalapeno, seeded and finely minced
Directions:
Put the cucumbers and honeydew in a fine mesh sieve set over a bowl. Sprinkle with a pinch of salt and allow it to sit for 5 minutes. Press out as much liquid as possible. Toss the cucumber and melon with the yogurt, onion and pepper in a serving bowl. Cover and chill in the refrigerator at least 1 hour. [Full story »]

Principal: Kids trashed school

County discusses T-SPLOST
County commissioners discussed the Transportation Investment Act of 2010, known as the T-SPLOST, at the July 26 meeting. Several concerns about the proposed 10-year 1% sales tax were raised, including the selection of road projects, the 30% penalty for required state transportation improvements if the special tax does not pass and unequal representation on the executive committee for the 10-county district. Pirate Regiment raises funds for historic trip
Pike County middle and high school students took part in a 12-hour band camp last week but that was just the beginning of their hard work. The PCHS Pirate Regiment Band was the only band from Georgia selected to play in New York City’s annual Veterans Day Parade in November and they must raise the funds for the trip.

Fallen officer answers last call
Rain began to fall July 28 as taps played and a local officer killed in the line of duty as a Clayton County deputy answered his last call. “Deputy Ricky Daly, at home and with the Lord,” said the police dispatch as he was lowered into his final resting place.
